What I’m Cooking This Week
Cause I’m tired of eating the same thing and I’m tired of eating out.
First of all, I don’t mind cooking. I just don’t like to always cook the same thing over and over again, and it’s mainly because I live with such picky eaters. From the biggest one to the smallest one, my family really does not know what good food is, and it’s my duty to expand their palettes if for no other reason than to add something new to the rotation. Here’s what’s on the menu for the week.
Zuppa Toscana Soup
First off, thank you, Andrea for introducing me to this soup the day we had lunch at Olive Garden. I have loved it ever since. Now, I think it’s time for me to introduce my babes to this flavorful and comforting soup. I found this recipe from Creme de la Creme, and I sure that it’s not going to disappoint. It has over 4.96 stars from over 621 voter, and I think that is impressive. I am going to serve it with bread and a salad, just like Olive Garden does it, and pray that there are leftovers, so that I can have some for lunch this week.
Sausage & Pepperoni Calzones
When is the last time y’all had a calzone? That long, huh? Well, it’s time we rectify that for you and for me. I was watching Tia Mowry cook an “Italian Pot Pie”, and I thought oh my, that would be great as a pizza, but then I thought, we have pizza all the time, and then it hit me, use it to make some calzones. Calzones, like pizza, are a perfect comfort food. In fact, anything with melted cheese is, am I right?
To switch things up a bit, I decided to look for an air fryer recipe just to see what would turn up, and I found one that looks good and easy to bring to life. Thanks to this recipe from Momsdish, I am going to cook them in the air fryer. Seeing as how I haven’t had them in a long time, I am counting on this meal being a good one. I can’t wait to see if my babes like them.
Chicken Pot Pie
There is nothing that reminds me of my childhood more than a chicken pot pie. You remember the little frozen ones? I used to think they were so cute. I think that is one of the reasons why I loved to eat them, that and the crust. I loved it most of all. Well, after watching Samo @dopefrais (I follow him on IG) make a semi-homemade chicken pot pie, I knew I had to make it for us. Since, I couldn’t find Samo’s recipe, I did a deep dive to find one that looked as close to his as I could, and I found this one from All Recipes, and it looks delicious.
When I tell y’all that there is no food more fulfilling and down-right comforting as a chicken pot pie, y’all better believe it. This one is going to be on rotation throughout the winter!
Slow-Cooker Cajun Chicken
Okay, now y’all may or may not know this about me, but I am a slow-cooking queen. If it can be slow cooked, I’mma do it. This week I’m trying some alfredo in the slow cooker. Now, I pinned this one a while ago on my “Slow-Cooking Inspiration” board. Y’all should check it out; I’ve got some good stuff pinned. But this pasta is the one I couldn’t wait to try, and look at it, doesn’t it look amazing? I was inspired to try this recipe by Melissa over at No. 2 Pencil. She has got it going on. I have my heart set on trying so many of her recipes!
