Fast Fajitas

When I cook, I am either slow cooking or fast cooking. There is no in between.

What was your favorite cooking show on Food Network? Mine was Semi-Homemade with Sandra Lee, and here’s why. I haven’t always felt the most skilled in the kitchen. It took many trials and errors to get to a place where I felt pretty confident preparing meals that my family would love, and watching Sandra Lee helped. She would add a little bit of her to each of recipes, and that made me realize that even recipes could be Revised.

Enter my Fast Fajitas. Now I use to cook these in my slow cooker, and I still do when I have the time to shred the chicken myself and cut up the veggies, but when I don’t, I cook them in one sheet pan or glassware container, really any oven-safe dish will work, so use what you have, and try not to overthink it.

Here’s what I use:

  • 2 Packages of Perdue Chicken Cutlets (Grilled)

  • 1 Bag of Frozen Peppers and Onions Medley

  • 1 Cup of Chicken Broth

One thing that has made cooking and revising a recipe much more doable is having a pantry with the Spices and Seasonings I need to make my recipe come to life. I got this fajita/taco seasoning recipe from Simple Healthy Kitchen, but you can use a fajita packet to make bringing this recipe to life even easier.

Fajita (Simple Healthy Kitchen)

1 Tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon pepper

What makes me love this recipe so much is the fact that everything you need is already prepared. All you have to do is dump it in the pan, cover it with foil, set your oven to 425, and let it cook for 25 minutes.

And when all is said and done, I usually make Fajita bowls with black beans and rice, or I make a good old Fajita topped with sour cream and cheese. Basically, you can do whatever you'd like. The only requirement for this recipe is that you enjoy this quick tasty meal.
